Low carb Mexican chicken casserole/. This was so good there weren't any leftovers. I did change a few things based on what I had. I used a 8×8 Pan, put in rotisserie chicken topped that with homemade taco seasoning. I used a whole can of diced tomatoes and a whole can of green chiles instead. I used about 3 ounces of cream cheese and roped with sharp cheddar. It was so good!!
